Simply Delicious

A while back I said I would post simple recipes (along with the crazy ones that Richie makes) and since then I've only posted one. So here are a couple of others.

Spinach Artichoke Dip (based on Alton Brown's)

1 cup thawed, chopped frozen spinach
11/2 cups thawed, chopped artichoke hearts (frozen or canned work)
6 ounces cream cheese
1/4 cup sour cream
1/4 cup mayonnaise
1/3 cup grated Parmesan
1/4 teaspoon salt
1/4 teaspoon garlic powder

Step 1: Preheat the oven to 350 degrees.
Step 2: Warm up the cream cheese in the microwave for 30-45 seconds until warm and soft.
Step 3: Mix all of the ingredients together in a big bowl.
Step 4: Put all of the ingredients in a baking dish and put in the oven.
Step 5: Bake for 25-30 minutes or until hot and bubbly on top.

Serve with fresh veggies, tortilla chips, or sliced bread.


Watermelon and Goat Cheese Salad
Step 1: Cut small slices of watermelon.
Step 2: Drizzle with fruity olive oil.
Step 3: Crumble goat cheese on top of the watermelon.
Step 4: Top with pine nuts, small pieces of basil (optional), and a little bit of salt.

A delicious sweet and salty combination.

Short and Sweet

I got an email from BlogHer a couple of days ago telling me that my ads have been suspended because I haven't posted on my blog in over two weeks. Wow. It's the first time in almost three years that I had so long between posts - including when I was in Europe for 2 1/2 weeks last summer. And I really have no excuses other than I haven't felt like blogging. In case everyone thought I died, I didn't. I'm alive and well. I've just been spending my time working, celebrating Richie's graduation, playing with family, and well...who am I kidding...watching Alias. Really, the majority of my time has been watching Alias.

And now it's time to go finish up season 3. I'll be back soon (hopefully sooner than two weeks this time).

Someone Tell April I Said Hello

Can someone tell me where April went? I somehow missed her and now it's May. I really feel like I lost an entire month, but when I look back, it was actually a pretty eventful one. So here's a quick recap since my blog has been lacking lately.

At the beginning of April I got transferred into yet another "role" at work. I'm on our two biggest projects, which means long hours and a lot of responsibility. It's been a great challenge, but I'm ready for the 60 hour work weeks to stop.

The middle of April came and went with half-marathon #8 in SLC as well as great catch-up time with my friends and family. After I got back, I went to see Kris Allen at Hard Rock Cafe. Thanks Darcee! Continued to work a ton, went to lots of baby showers, and played a lot of volleyball.

And finally, the end of April brought with it a cold and allergies that took me out for two weeks but did give me a chance to catch up on my 100 in 2010 challenge. I couldn't even celebrate the fact that Richie finished law school on Wednesday or that one of my best friends is moving to NY (she's been out of the country for two years) at the end of the summer.

And then today as the perfect start to May, I went down to Eastern Market with a couple of good friends then went over to the International Fine Arts Festival in National Harbor (the perks of having an office there). Other than it being 90 degrees + humidity, it was the perfect day.

So that's what we've been up to. I'm hoping that with the showers, May also brings less hours at work, an appropriate law school graduation celebration, fun time with family, and a body that's ready for swimsuit season (I'm starting Jillian Michael's 30 day shred on Monday). And more than anything, I hope I have time to enjoy every day of it. No more of this losing months at a time.
