Spinach Artichoke Dip (based on Alton Brown's)
1 cup thawed, chopped frozen spinach
11/2 cups thawed, chopped artichoke hearts (frozen or canned work)
6 ounces cream cheese
1/4 cup sour cream
1/4 cup mayonnaise
1/3 cup grated Parmesan
1/4 teaspoon salt
1/4 teaspoon garlic powder

Step 1: Preheat the oven to 350 degrees.
Step 2: Warm up the cream cheese in the microwave for 30-45 seconds until warm and soft.
Step 3: Mix all of the ingredients together in a big bowl.
Step 4: Put all of the ingredients in a baking dish and put in the oven.
Step 5: Bake for 25-30 minutes or until hot and bubbly on top.
Serve with fresh veggies, tortilla chips, or sliced bread.
Watermelon and Goat Cheese Salad
Step 1: Cut small slices of watermelon.
Step 2: Drizzle with fruity olive oil.
Step 3: Crumble goat cheese on top of the watermelon.
Step 4: Top with pine nuts, small pieces of basil (optional), and a little bit of salt.
A delicious sweet and salty combination.

when I first saw the picture I thought it was going to be Ahi, and I was going to say "gross", although I like sushi that is not on my list of loves. But the watermelon sqaures look beautiful and sound tasty, I'll have to try it!
The watermelon and goat cheese salad looks amazing!
