Honey mustard curry chicken
INGREDIENTS
* 5 lbs chicken thighs and drumsticks
* 1/3 cup butter, melted
* 2/3 cup honey
* 1/2 cup prepared mustard
* 2 teaspoons salt
* 2 teaspoons curry powder
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. Place chicken pieces in a shallow baking pan, skin side up. Combine the melted butter or margarine, honey, mustard, salt and curry powder and pour the mixture over the chicken. Bake covered in foil for the first 30 minutes, then remove foil and bake another 45 minutes, basting with pan drippings every 15, until the chicken is nicely browned and tender and the juices run clear.

1 lb boneless, skinless chicken tenders
1 tub light sour cream
1 envelope onion soup mix
Put all ingredients in a slow cooker/crock pot and mix well. Turn crock pot on low. Let cook for 8 hours. Shred chicken and serve over noodles or rice.

Coconut Chess Pie
* 1 stick butter
* 1.5 cups sugar
* 3 eggs, beaten
* 1 cup flaked coconut
* 2 tsp vinegar
* 1.5 tsp vanilla
Combine butter and sugar in saucepan; heat, stirring until melted and well blended. Combine all ingredients and mix. Pour into an unbaked pie shell. Bake about 1 hour at 350.

My favorite recipe currently is for quick easy pizza dough.
1TBS yeast
1 Cup hot tap water
1TBS sugar
1 TBS oil
2-21/4 C flour.
Mix the yeast in with the water. Mix in the sugar and oil. Then add the flour.
Poof, instant pizza dough. no rising involved. Just cook at 450 for 15-20 minutes. :)

8 oz sour cream
8 oz cream cheese
taco seasoning
lettuce
tomato
black olive salsa
mix sour cream, cream cheese, and 1/2 pkg taco seasoning. Spread mixture on bottom of platter, layer lettuce, tomato, black olives and salsa on top. Refrigerate before serving. serve with tortilla chips!

3 tablespoons olive oil
1 pkt garlic and herb soup mix
1 pound chicken
mix soup mix and oil in bowl
dip chicken in mix
cook on grill or broil until no longer pink

9 Cups Corn Chex® cereal
1 Cup Semi-sweet Chocolate Chips
1/2 Cup peanut butter
1/4 Cup Butter or Margarine
1 Teaspoon Pure Vanilla Extract
1 1/2 Cups Powdered Sugar
Into large bowl, measure cereal; set aside.
In 1-quart microwavable bowl, stir together chocolate chips, peanut butter and butter. Microwave uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring /tossing until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool.
Store in airtight container in refrigerator.

Ok, I would looove the Restaurants.com gift certificate.. I'm going to give you our favorite family dessert.. Reces Chocolate Cake
1 box Devil's food cake mix
About half a bag of Reces mini baking pieces(they look like tiny reces peanut butter cups)
2-3 tbs peanut butter
1/2 bag of Reces peanut butter chips(half of the goes in the cake, the other half on top)
Ok, this is really easy.. mix the cake according to box directions. Then add in the Reces mini cup pieces and half of the Reces peanut butter chips to the batter. Bake cake(again, according to box directions) and cool.
Then take maybe 2-3 tablespoons of peanut butter and melt it in the microwave. Drizzle on top of the cake. Then toss the peanut butter chips on top of that.
After that, pour yourself an icy glass of milk and cut you a hunk of cake and eat!!
Coconut curry chicken. Even my picky 2-year-old likes it! And she doesn't like anything!

Yummy marinade:
1 cup pineapple juice
1/2 cup soy sauce
1 TBSP chopped roasted garlic (from a jar..lets make it easy!)
2 TBSP red wine vinegar
1/2 cup molasses
Mix it all together in a zipper lock bag, throw in boneless chicken tenders, pork chops or beef steaks and grill or pan fry in a little veggie oil. Enjoy!

SPLIT PEA WITH HAM SOUP
2 med. onions, coarsely chopped
1 lb. split green peas
6 c. water
1 lb. ham or turkey ham
2 tsp. sweet basil
1/4 tsp. pepper
2 tsp. chicken bouillon
1 sm. carrot, peeled and diced
1 sm. potato, peeled and diced
In a large soup pot, cook ham, onion, carrot, sweet basil, and chicken bouillon for 1/2 hour. Add rest of ingredients and simmer for 1 hour more, or whenever ham is fork tender. Remove ham and cut into bite size pieces and return to soup. Add more water for your own consistency. If you have a ham bone boil it in the water first.

My favorite recipe to make to bring people is my Pumpkin Chocolate Chip Cake. It is very easy to make and with different cake pans you can make it look really fancy.
Pumpkin Chocolate Chip Cake
3 cups flour
1 cup oil
1 cup water
1 can solid pumpkin (about 1 pound)
1 ½ cup sugar
½ - 1 teaspoon cinnamon
2 teaspoons baking powder
2 teaspoons baking soda
½ teaspoon salt
1 cup chocolate chips
Mix everything together by hand. Pour into a greased bundt pan. Bake at 350 for 1 hour.

1 lb. ground beef or turkey
1 pkg. taco seasoning
1 lb. velveeta cheese, cubed
2 cans tomatoes and green chilies, drained
Brown meat and make like you would for tacos, but use slightly less water than called for on the package. Place meat, cheese, and tomatoes and green chilies in the crockpot til cheese is melted.
Serve with tortilla chips.
It would be a good idea to use a crockpot bag with this recipe to make cleanup easier.

Bacon Crisps
club crackers
bacon, cut in half
parmasean cheese
Put spoonful of cheese on cracker-wrap in half piece of raw bacon. Bake on 200 degrees for 2hours.
My favorite (super cheap pasta!)
Penne alla Vodka Pasta
2 Tbsp plus 2 tsp olive oil, divided
4-6 oz prosciutto, chopped
1/3 cup shallot, chopped
2 garlic cloves, minced
1 1/2 Tbsp tomato paste
1/2 tsp red pepper flakes
28-oz crushed tomatoes
1/3 cup vodka
1/2 cup heavy cream (I sub fat-free half and half)
1 lb mini-penne
2 chicken breasts, cooked and sliced
1/4 cup chopped chives, plus more garnish
salt & pepper, to taste
Parmesan, for garnish
Bring pot of salted water to boil. Add pasta to the water just after adding vodka to the sauce.
Heat 2 Tbsp oil over medium heat. Add prosciutto and shallot and cook until the shallots have softened and the prosciutto has mostly browned. Stir in garlic and red pepper flakes until fragrant, about 2 minutes. Add tomato paste and increase flame to medium-high heat.
Stir in tomatoes and 1/2 tsp salt. Remove pan from heat and add vodka. Return pan to cooktop and simmer for 8 to 10 minutes, stirring frequently. Stir in cream, chicken, and chives and cook until hot, about 2 minutes. Stir in the 2 tsp olive oil and remove from heat.
Add pasta sauce to drained penne pasta and toss. Season with salt and pepper to taste. Divide into 4 bowls and top with Parmesan and additional chives.
Cheese ball:
3 pkgs. budding ham chopped
3 blocks cream cheese soft
1 small bunch green onions diced
2 tsp. season salt
1 Tblsp. Worcestershire sauce
Mix all together and serve with crackers, good stuff!

Really easy curry (vegan, too!):
Saute a sliced onion, chopped potato, and 1/2 a head of chopped cauliflower in a large skillet. Add a can of diced tomatoes, a can of coconut milk, a can of chickpeas (rinsed and drained), and a couple tbs of Patak's mild curry paste. Simmer for ~1/2 an hour. Serve over rice. Quick, easy, healthy, tasty!

You can come up with your own amounts.
Spread a layer of Grey Poupon Honey Mustard on chicken and coat in plain bread crumbs. Bake until done.
Seriously, that is it!!! But it needs to be Grey Poupon to be Crack chicken, though other brands are maybe marijauna chicken.

Ingredients
1 large onion, chopped
1 pound boneless, skinless chicken breasts
2 cups low-sodium chicken broth
1 green pepper, seeded and chopped
1 can diced green chili peppers
1-3/4 teaspoons ground cumin
1/2 teaspoon cayenne pepper
3/4 teaspoon salt
1 can (14.5 ounces) diced tomatoes, not drained
1-1/2 cups frozen corn, thawed
2 cans (15 ounces each) cannellini beans, drained and rinsed
2 tablespoons stone-ground cornmeal
Shredded Monterey Jack cheese
Directions
1. In a 5- to 6-quart slow cooker, combine onion, chicken, low-sodium broth, green pepper, chilies, 1-1/2 teaspoons of the cumin, 1/4 teaspoon of the cayenne and 1/4 teaspoon of the salt. Cover and cook on HIGH for 4 hours or LOW for 6 hours.
2. Remove the chicken to a cutting board and allow to cool slightly. Shred the chicken and return it to the slow cooker with remaining 1/4 teaspoon each of the cumin and cayenne, and the tomatoes, corn and beans. Gently mash some of the beans against the side of the bowl to thicken the chili. Stir in the cornmeal and the remaining 1/2 teaspoon salt. Let sit a few minutes to soften the cornmeal. Serve sprinkled with a little of the Monterey Jack cheese.

Chicken Enchilada Ring

2 C. coarsely chopped chicken
1/4 C. chopped pitted ripe olives
1 C. shredded Monterey Jack/Cheddar blend
1 can (4 oz.) chopped green chilies, undrained
1/2 C. mayonnaise
1 T. Southwestern Seasoning Mix
2 plum tomatoes
1 lime
2/3 cup finely crushed tortilla chips, divided
2 pkgs. crescent rolls
1 C. salsa
1 C. sour cream
Preheat oven to 375° F.
Mix chopped chicken, olives, cheese, green chilies, mayonnaise and seasoning mix in bowl. Seed and chop one tomato. Slice lime in half. Juice one half of lime to measure 1 t. of juice. Reserve remaining lime for garnish. Add chopped tomato and lime juice to chicken mixture. Reserve 2 T. crushed chips and add remaining chips to chicken mixture. Mix well.
Sprinkle reserved crushed chips over flat side of a large cutting board. Place dough onto chips and press down so chips adhere to dough.
Separate dough into triangles. Arrange triangles, chip side down, in a circle on a 13" baking stone. Wide ends should overlap in the center and points should be toward the outside. There should be a 5" diameter opening in the center.
Scoop chicken mixture onto the wide ends of the triangles. Bring points of the triangles up over filling and tuck under wide ends. Do not cover filling completely. It should show in between each triangle.
Bake 20-25 minutes or until golden brown.
For garnish, cut remaining tomato into 8 wedges. Cut remaining half of lime into 4 slices, cut in half. Arrange between openings of ring where filling is showing. Serve with salsa and sour cream.

This is my favorite spaghetti sauce recipe and I'd prefer the Starbucks card. Thanks for the contest!
favorite recipe - make it about 4 days a week - bread!
3/4 C. warm water (110-120 degrees)
1 package yeast
2 T brown sugar
combine and set until bubbly.
Add 3 C. flour and 1 t. salt. I mix this in my kitchen aid with a dough hook. While mixing add 2 T veg. oil and 1 egg. mix and add additional flour, probably 11/2 -2 C. flour until dough no longer sticky. Remove from bowl and shape into ball. Spray bowl with cooking spray. Put dough back in a spray, cover with plastic wrap. let double (30-45 minutes). Punch down, let sit 10 minutes. Shape into loaf pan or braid into challah bread. Make egg wash with 1 egg and 1 t. water. Brush over bread. Let rise 30 minutes. Brush again and then bake at 375 for 20-30 minutes. YUM!

This is my favorite recipe... great comfort food and really warming on a cold day.
Southern Macaroni and Cheese
8 ounces elbow macaroni, cooked
8 ounces cheddar cheese or colby cheese, shredded
1/4-1/2 cup butter, melted
saltine crackers or cheese crackers, crushed
2/3 cup milk
salt and pepper
Spray a flat bottomed casserole dish with vegetable spray.
Put half of the macaroni in the dish, top with half of the shredded cheese.
Sprinkle with salt and pepper.
Repeat.
Mix the melted butter and enough crushed saltines to absorb the butter, together.
Spread on top of cheese layer.
Pour milk slowly over all.
Bake at 350°F for 35-45 minutes or until milk is no longer liquid.
Let set for at least 10 minutes before serving.

She was doing 30 minute menus long before any of the chefs on food network. All her recipes consist of ingredients from a list of kitchen staples that you always keep stocked at home and a grocery list of 10 items or fewer so you can go through the quick check out on your way home.
I constantly scour online used bookstores to buy copies of it for friends and family!

Enchiladas!
1 lb beef
1 med onion
1 Green pepper
1 12oz can enchilada sauce
1 10 oz jar of salsa
1 can of cream of mushroom soup
1 12pk of tortillas
1 16 oz bag of cheddar & mozzarella cheese.
Brown meat,onion and green pepper. Add sauce, soup, and salsa. Simmer for 20 minutes. Take each tortilla, sprinkle it with cheese, spoon in sauce, roll and set it tightly packed in the pan, Pour leftover sauce on top. Top with remaining cheese and bake at 350 degrees until cheese is browned.

4 chicken breasts
1/2 C melted butter (I know, I know)
1 pkg dry ranch dressing
1/2 C parmesan
1/2 C cornflakes, crushed
Dip chicken in butter, roll in combination of other ingredients. Bake at 350 until juices run clear! YUMMY.
Here's a yummy recipe for you:
Chicken & Spinach Lasagna
Ingredients
8 oz part-skim mozzarella cheese
10 3/4 oz Campbell's 98% Fat-Free Cream Of Mushroom Soup
1 1/2 cup fat-free skim milk
1/8 tsp ground nutmeg
1/8 tsp ground red pepper
10 oz chopped frozen spinach
1 egg
15 oz part-skim ricotta cheese
12 pieces no cook lasagna noodles
10 oz cooked boneless, skinless chicken breast
1/2 cup Kraft 100% Grated Parmesan Cheese
Instructions
Reserve 2/3 cup of mozarella cheese for top layer. In medium bowl, combine soup, milk, nutmeg and red pepper; set aside.
In another medium bow, combine spinach, egg and ricotta; mix well.
In bottom of 13x9-inch baking dish, spread 1/2 cup of soup mixture. Arrange 4 lasagna noodles on mixture. Top with 1/3 of remaining soup mixture, 1/2 of spinach mixture, 1/2 of remaining mozarella and 1/2 of the chicken. Repeat layers ending with remaining noodles, soup mixture, reserved mozarella cheese and Parmesan cheese.
Bake at 350 degrees for 40 minutes or until hot and bubbling. Let stand 15 minutes before serving.

Mexican Stuffed Shells
15 Jumbo Pasta Shells
1 lb ground beef
1 8 ounce cream cheese cut up in 5 peices
1 tsp chilli powder
1 16 ounce jar of salsa (2 cups)
1 cup cheddar cheese
Cook shells according to directions. Cool until you can easily handle. Cook ground beef until brown, drain fat; stir in cream cheese (I always leave one section out its too much for my taste!) and chilli powder. Until thoroughly mixed. Cool slightly. Spread 1/2 cup of salsa in 2 quart dish (or enough to be covered on the bottom) Fill shells with meat mixture, place on top of the salsa. Put remaining salsa on top. Cover and bake at 350 degrees for 15 min. Sprinkle with cheese and bake 15 more min. uncovered.

Sweet and Sour Meatballs
1 pkg frozen meatballs or make your own with ground turkey
1 bottle Yoshida's Sweet and Sour Sauce
1 c. bottled barbecue sauce
1 can chunked or crushed pineapple.
Put all ingredients in slow cooker. Mix well and cook on low for 1 hour to heat through. Keep on low and just stir occasionally.

Sweet & Spicy Pork Chops
4 bonless pork chops
1 packet taco seasoning
1 jar salsa
1 jar apricot or peach perserves
(The heat of the salsa and seasoning affect the heat of the pork chops. So maybe start with mild unless you like things spicy)
Dump it all into a crock pot (be sure to mix in the seasoning well) and cook on low for 6 to 8 hours. The pork chops can even be frozen. It's super easy and always becomes a favorite after people try it.

Oreo Truffles
Yields: Approximately 40 Truffles
8 ounces cream cheese, softened
1 lb Oreo cookies
½ tsp. vanilla extract
1 lb of baking chocolate (can use mix of white and milk; will need more if you want to drizzle on top, etc.)
In a large mixing bowl, beat cream cheese for a couple minutes to smooth out.
Using a food processor, grind cookies to a powder (some bigger pieces are ok).
Blend cookie powder into cream cheese (add in just over 1/2 of the cookie powder and mix until thoroughly combined; then, add in the rest of the cookie powder and mix just until combined). Add vanilla extract and continue blending until thoroughly mixed (there should be no white traces of cream cheese). Cover bowl & chill mixture in refridgerator for 15-45 mintutes.
Roll into small balls (approximately 1 inch in diameter) and place on wax (or parchment) paper-lined cookie sheet.
Cover and place back in the refridgerater to firm (15-45 minutes).
In double-boiler, melt chocolate, stirring occasionally, until the chunks are smooth. Remove and stir to melt the rest of the chocolate. (You can add solid vegetable shortening, e.g. Crisco, to help smooth out the chocolate if needed) If the chocolate mixture starts to firm up, place back over the double boiler to slowly remelt, or gently rewarm in the microwave.
Dip balls and coat thoroughly.
With slotted spoon, lift balls out of chocolate and let excess chocolate drip off.
Return truffle to wax (or parchment) paper-lined cookie sheet.
Let cool (place in freezer).
Store in airtight container, in refrigerator.
Slowly melt the white chocolate in a double boiler, Dip each truffle ball and set aside on a silpat or parchment paper. Store in the refrigerator after all are dipped.
Variation: Use Mint Oreo cookies and add 1 drop of green food coloring to the white chocolate for Mint Oreo Truffle Balls. You can also drizzle some dark chocolate over them to make creative designs.

Here's my favorite that my husband makes: Cajun Chicken
4 oz. rigatoni or penne pasta
2 chicken breasts
2 Tbsp Cajun seasoning
1/2 c. skim milk
5 oz. baby spinach leaves
8 oz. fresh mushrooms, sliced
1 Tbsp butter
1 tomato, chopped
Prepare rigatoni according to its package directions. Lightly coat a large skillet with cooking spray and place over medium heat. Coat chicken breasts with Cajun seasoning. Place chicken breasts in skillet; cook for approximately 6 minutes; turn and cook for 6 more minutes until no longer pink in the center. Transfer the cooked chicken breasts to a plate; cover with foil to keep warm. Add milk, cooked pasts, spinach, mushrooms and butter to skillet; mix well. Cover and simmer over low heat, stirring occasionally, until heated through, approximately 5 minutes. Divide pasta mixture into two portions and top with a portion of Cajun chicken. Garnish with tomatoes, serve and enjoy!

Mix all together and cook on low for 6-8 hours. Shred chicken and serve in tortilla shells with shredded cheese! Yummy!!!

Super Easy Crock Pot Kalua Pig

What you need:
Crock Pot
Pork butt or shoulder
2 cups apple cider
OR
2 cups pineapple juice instead of apple juice
I think we used pineapple juice
a year ago for a luau.
Others said they preferred pineapple juice
and what we did turned out tasty.
1/2 cap Liquid Smoke
(Often in the BBQ section
and might be called Hickory Smoke)
Some folks like a bit less hickory/liquid smoke
so that might be something to watch out for.
How to do it:
Early in the day, put pork butt (shoulder)
in crock pot.
Add juice of choice and
liquid smoke.
Turn crock pot on LOW and leave
alone until evening about 9-10 hours.
Take out the meat and shred.
Salt to taste.
Kalua pig is always shredded it
will naturally shred when well cooked.
It is frequently served with cooked/steamed cabbage and
rice of some kind.
Ladle the kalua pig's liquid over the cabbage and rice.
Soy sauce is available on the table
for folks who desire it.
Chicken Eden Isle
Wrap skinless, boneless chicken breasts in bacon, layer on top of Armor dried beef in baking dish (rinse beef first if you want to reduce salt), mix 1 container of sour cream with 1 can of cream of mushroom soup, add canned mushrooms if desired, pour over top of chicken, let marinate overnight or several hours, bake at 350° for 1 hour. So easy and yummy!

1 can cream of chicken soup (I use homemade)
1/3 c. cooking wine (I use apple juice)
4 slices Swiss cheese
1 c. crushed stuffing mix (I never crush it and often use more than 1 c.)
1/3 c. melted butter
Place chicken in an 8x8 casserole dish that has been sprayed with cooking spray. Lay swiss cheese slices on top of chicken. Mix soup and wine and pour over chicken. Sprinkle stuffing on top of that, and drizzle melted butter over stuffing. Bake at 350 for 45-60 minutes.

1 can Hormel Hot Chili, no beans

Put in microwave for 3 min, stir & get out the chips!

Wonderful Salsa
8 cups tomatoes, peeled and diced
2 ½ cups diced onion
1 ½ cup diced green bell pepper
1 cup diced hot peppers
6 cloves garlic, minced
2 tsp. cumin
2 tsp. black pepper
2 Tbsp. dried cilantro
1 Tbsp. canning salt
1/3 cup sugar
1/3 cup white vinegar
29 oz. can of tomato puree
1 ½ cups tomato sauce
Mix everything together in large saucepan. Bring
slowly to boil;
boil gently for ten minutes (or less – be sure onions
& peppers remain somewhat crisp).
NOTE: At this point you could cool, refrigerate & use
without canning if desired.
Pour into hot jars, cap with hot rings & lids.
Process in boiling water bath for 10 minutes.
Yield: 7 to 8 pints.
Cashew Chicken -- The secret is in the sauce!
I always eat jasmine rice with my cashew chicken, I love the nutty flavor. A few chopped green onions and some cashews. You can stir-fry your chicken or dredge it in flour and fry it for the famous Springfield, MO style. Top it all off with the sauce.
1 Cup chicken broth
1 TBS Oyster Sauce
1 tsp sugar
1 TBS cornstarch
Combine ingredients in a saucepan. Bring to a rolling boil. Continue to boil for 5 minutes. Pour over chicken, rice, onions and nuts.
This recipe is very easy to multiply if you like lots of sauce.

Yogurt Pie
2 yoplait yogurts (flavor your choice)
1 8oz. container coolwhip
1 graham cracker crust
Combine yogurt and cool whip. Place in crust and smooth. Freeze.
This is a fun recipe my younger siblings like to help with. It's supper easy and very yummy.
Spinach artichoke dip:
1 pkg frozen chopped spinach, thawed
1 can artichokes chopped fine.
3/4 cup mayo
4 oz shredded cheese (mozzerella is best)
pepper
Mix well, bake for 20 minutes or until slightly brown on top. Dip in your favorite veggies or chips. Or use as a sandwich spread with turkey.
Leftover crustless quiche
Take leftover meat and veggies (or leftover meat and frozen veggies) and spread across bottom of pie plate. Grate cheese (hard cheese, cheddar, etc) over the top. Mix together 2-3 eggs, 1 c. milk, and 1 c. flour or bisquick. Add any spices you might enjoy. You can also add leftover dairy (i.e. sour cream, etc.) into the egg mixture. Pour eggs over meat veggies and cheese, cook for 30-35 mins at 425. This is adapted from the Tightwad Gazette, and one of my favorite quick meals!

1. boil potatos (with skin) and mash
2. add 1/4 cup butter
2. add 1 tbs McCormick Salt Free Herb seasoning (use less or more for your taste)
3. add 1/4 cup sour cream.
I came up with this one day, and my family loves it! Enjoy!
Recipe for the SuperBowl coming up-great snack!
1.Pop a bag of microwaveable popcorn and remove unpoped kernals and put in a large bowl.
2.Melt a bag of white chocolate morsels in the microwave for about 1 minute until it is smooth and creamy.
3.Pour the chocolate over the popcorn and toss till it is completely covered with the chocolate.
4.Spread on waxed paper to cool or put in fridge for a couple of minutes to harden it quickly. 5.Break it up into bite size pieces and enjoy!

1 cup corn syrup
2 1/2 cup brown sugar.
cook over medium to boil. let boil 3 minutes.
add:
1 can sweetened cond. mil
2 tsp vanilla
2 cubes real butter
let it come back to a boil. boil for two minutes.
stir continuously through out.
add to air popped (best) popcorn. about 3 good sized bowls.

How fun! Here's our favorite family Thanksgiving Recipe for Drunken Yams:
2 large cans canned yams
1/2 stick butter
1/2 cup brown sugar
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves
grated orange zest
juice from 1 orange
healthy shot of dark rum (at least 1/4 cup)
1/4 cup whipping cream
Melt the butter in a saucepan and pour in drained yams. Mash while heating through, then add sugar and spices. (Adjust to taste.) Add orange zest, orange juice, and rum. Cook until liquids have mostly evaporated. Remove from heat and use electric mixer to whip potatoes. Add whipping cream and keep whipping until smooth.

I love roasted broccoli... it is so incredibly easy, yet ever so tasty!
You simply mix about 1/4 cup olive oil with about 4 large cloves of crushed garlic. I know it sounds like a lot, but when it roasts, it mellows and is incredibly yummy!
Next, you cut your broccoli stems off (or just get crowns), and dip the tops of the broccoli into the oil/garlic mix (or you can toss the broccoli and oil in a big bowl).
Place the broccoli on a baking sheet and sprinkle with coarse salt. Roast in 375 degree oven until fork tender.

WHat a great idea to ask for recipes! Mine is called Fancy Chicken (though I don't know why because it is really easy and so yummy!)

super easy enchiladas:

1 can refried beans
Combine chicken with soup & sour cream.
Spread 2T of refried beans onto tortilla. Place 1/2 cup chicken mixture down center. Sprinkle 2T cheese on top. Roll up and place seam side down into greased 9x13.
Top all enchiladas with remaining cheese and enchilada sauce.
Bake @ 350 for 25 minutes.
SOOO easy but SO yummy! My hubby loves this one :)

Microwave until chees melts and then stir the two together. Serve with corn chips.

Ranch Bacon Salad
1 (16 oz.) bag cole slaw
1 (6 oz.) pkg. dried cranberries
1 lb. bacon (fried and drained)
1 bottle Ranch Dressing
1 cup sugar
Mix first three ingredients.
Then mix dressing and sugar and pour over slaw.

I don't have written recipes for many of my standard dishes. But I can do close on this desert. I'm not sure what these are actually called. I think some people call them haystacks.
1 12 oz pack choc. chips (semi-sweet)
half pack butterscotch chips
1 large bag chow mein noodles
1 bag raw spanish peanuts
Roast the peanuts.
Melt the chocolate and butterscotch together.
Pour over the chow mein noodles and stir in peanuts.
Drop into small blobs on waxed paper and let harden.
Clever idea! Are you gonna get to cook it all?!

Mexican lasagna:
can of beans
can of corn
can of chilis
can of tomatoes
pound of ground meat
lots of cheese
layer together (drain all but tomatoes) and bake at 350 for 30 minutes!
Its super good and even better with fresher ingrediants!
Here is one of my favorite recipes!
Buffalo Chicken Dip
Ingredients:
2 bricks cream cheese (softened)
1 small bottle chunky bleu cheese dressing
1/2 to 1 cup hot sauce (to taste)
3 chicken breasts (boiled & shredded)
1. Preheat oven to 400*
2. Mix all of the above ingredients until fairly smooth
3. Pour into a baking pan sprayed with Pam
4. Bake for 15-20 minutes or until slightly browned and bubbly
5. serve with tortilla chips, pita chips, crackers, or bagel chips!
Great for a superbowl party!

My Mother in laws Chicken Pot Pie
canned chicken
a bag of frozen veggies (your choice)
a jar of alfredo sauce
dump it all together
put it in a refrigerated pie crust with another on top
Bake at 350 for 50 min.
So easy and GOOOOOOOOOD!

1 bag of Doritos
1-1.5 pounds ground beef, browned
1 packet taco seasoning
1 head lettuce
1 or 2 cans kidney beans
1 can diced tomatoes
1 bottle Catalina dressing
2 cups Cheddar cheese
Combine all ingredients in large bowl. Toss.

Love reading the recipes! My husband's favorite dinner is super simple - a roll of turkey kielbasa browned in the skillet; egg noodles cooked in chicken broth with Italian seasoning; mix the two together and add a big bunch of green beans and shredded carrots, heat and serve. We threw it together when we were in college and it lives on in family kitchen infamy as "Goop."
One of my super easy favs I made for dinner tonight!
Italian Chicken Pasta Salad.
1/2 - 3/4 box of Farfalle (bowtie) pasta
3 large chicken breasts
2 large tomatoes
1 can of olives
half a head of lettuce (I prefer green leaf)
Some jack or mozzarella or parmesan cheese.
House Italian dressing (I use Wishbone)
Cook chicken until done with some butter and Italian seasoning. Let cool and cut into bite size pieces.
Cook pasta, drain, and wash with cold water.
Chop lettuce, tomatoes, and olives.
Mix pasta, lettuce, tomato, olives and add dressing to taste. Mix in chicken. Top with shredded cheese. Serve!
Here's the secret recipe for my mom's "Chicken Spaghetti:"
- Boil chicken until it falls off the bone
- Remove chicken from broth
- Add sliced carrots and celery to broth and boil until cooked through
- Cook spaghetti with carrots and celery until done
- While carrots, celery, and spaghetti are cooking, remove chicken from bones and shred/cut into small-ish pieces
- When done, remove spaghetti and veggies from broth and put in serving bowl
- Add chicken
- Add cans of condensed cream of chicken and cream of celery soups in approximately equal portions (i.e., one or two cans of each, depending on the amount of sauce you need)
- Thin with broth until it's as thick or soupy as you like it
My children like to make this easy recipe...
EASY SLOPPY JOES
1 lb. ground hamburger, browned
1 can tomato soup
Worcestershire sauce to taste (1 T or so?)
hamburger buns
Heat 1st three ingredients together in saucepan. Serve on buns.
Honey-baked ham bone
2 lb of split peas
10 cups water (not 16 as recommended)
Make the first 1 lb, then add the second lbs.
This makes very thick soup.
Pizza Bagels
Split a big bagel, cover it with good sauce and mozz cheese and pop it in the toaster oven...
Simple but pure comfort food!
Even though it's a weight watchers recipe, it's yuuuuuuuuuummmy!

Chic Cassaroll
2 cans cream of chic
1 8oz container of sour cream
4-6 boiled and shreaded chic breasts
Mix all ingreadients together and put in a cassaroll dish then put the remaining ingreadients on top for the crust.
1 packet of crushed original RITZ crackers
350 degrees for 35 minutes
1 stick of butter

Party-Size
1 box orzo
1 cucumber chopped bite-sized (remove seeds)
1/3 cup red onion chopped
bunch chopped parsley
1 red, yellow and green pepper chopped (bite-size)
1/4 cup capers (chopped)
crumbled feta cheese
calamata olives chopped
pine nuts, toasted--optional
Dressing:
1/4 cup olive oil
1/4 cup balsamic vinegar
Mix all with dressing and top with pine nuts
Chill and serve cold.

Crumble up feta cheese
Cook up some penne pasta
